How to Make Chimichanga Lasagna

Here's how to make delicious chimichangas without the fuss of individual burritos: it's made in layers like lasagna! This dish never lasts long - my family loves it and so will yours.

Dawn King’s Chimichanga Lasagna

Ingredients

1 1/2 lbs. of ground turkey (ground beef or ground chicken may be used if you prefer)

3 15 oz. cans of chili (with or without beans)

1 15 oz. can of refried beans

6 flour tortillas (medium size)

3 cups of shredded cheddar cheese

1 large green bell pepper

1 large yellow onion

SPICES: seasoned salt, pepper, chili powder, onion powder, garlic powder

12 oz. jar salsa

8 oz. Sour cream and/or guacamole

4 tbsp. olive oil

1. Heat oven to 350º

2. Chop ½ onion and ½ bell pepper and place in large mixing bowl. Add ground meat to onion and bell pepper and season to taste (with above spices).

3. Heat 2 tbsp. olive oil in large skillet.

4. Add meat mixture to skillet and stir until brown; remove from heat.

5. Drain meat completely and set aside.

6. Heat chili and remaining onion & bell pepper in large saucepan and season to taste with above spices.

7. Heat 1 tbsp. olive oil in skillet.

8. Place tortilla in skillet until lightly brown on each side. Repeat until all six tortillas have been browned.

9. Place 2 tortillas side by side to cover bottom of 8 x 11 baking dish.

10. Spread 2 tbsp. of refried beans onto tortillas.

11. Place even layer of meat mixture on tortillas.

12. Spread 2 tbsp. of salsa on meat mixture.

13. Sprinkle even layer of cheese.

14. Repeat steps 8 – 13.

15. Place last 2 tortillas on top.

16. Place warm chili on top of tortillas.

17. Sprinkle with remaining cheese.

18. Heat in 350º oven until cheese is melted.

19. Serve with sour cream and/or guacamole and enjoy!
